4 as a side
- 2 Continental cucumbers, chopped or 3 large Lebanese cucumbers, chopped
- 4 vine ripened tomatoes, cut into wedges
- 1 green capsicum, chopped
- ½ red onion, thinly sliced
- 50g (⅓ cup) kalamata olives
- 200g piece Greek fetta, cut into cubes
- 3 tbs extra virgin olive oil
- 1 tbs red wine vinegar
- 1 tsp Greek oregano
- 1 tsp caster sugar
1 Combine the cucumbers, tomatoes, capsicum, onion, olives and fetta in a large bowl. Season well with pepper. Toss gently to combine.
2 Whisk all the dressing ingredients together. Pour over the salad just before serving.
