- 700g zucchini coarsely grated (about 4½ cups grated)
- 6 eggs
- 1/3 cup light olive oil
- 200g shaved ham, chopped
- 200g grated tasty cheese
- 1/4 cup self-raising flour, sifted
- Greek Salad & lemon wedges to serve, optional
1 Preheat oven to 180°C fan forced. Grease and line 18cmx28cm (base) slab pan.
2 Place grated zucchini in a clean cloth, lightly squeeze to remove excess liquid.
3 Whisk eggs and oil together in a large bowl until well combined. Stir in zucchini, ham and cheese. Sift flour over the zucchini mixture, stir to combine. Season with salt and pepper.
4 Pour into pan. Bake for 45 minutes or until set in the centre. Stand 5 minutes. Slice and serve with Greek salad and lemon wedges
