Gold Squash

  • 8-10 gold squash (yellow squash), washed, ends trimmed
  • 1 tbs butter
  • 1 tbs olive oil
  • 3 garlic cloves, sliced
  • ½ small red chilli, finely chopped
  • 1 tbs lemon thyme leaves
  • 1 lemon, cut into wedges

1.       Slice the squash. Combine butter, oil and garlic in a frying pan over medium heat. Cook 2-3 minutes until garlic softens slightly. Add the squash. Toss to coat. Cover and cook 3-4 minutes until squash are just tender.

2.       Add chilli, thyme and season. Squeeze over lemon, toss to combine. Serve.
