- 14 fresh lychee, peeled, seeds removed
- 50ml dry vermouth
- 1/3 cup passionfruit pulp (about 3-4 passionfruit)
- 2 cups ice cubes
- 300ml gin or vodka, chilled
1 Chill four martini glasses and your cocktail shaker in the freezer for 1hour if time permits.
2 Combine 6 lychee and vermouth in a blender. Blend until smooth. Strain into a jug, pressing as much liquid from the fruit pulp as possible.
3 Place two lychee into base of chilled glasses.
4 Pour half the lychee vermouth mixture into cocktail shaker. Add 2 tablespoons passionfruit pulp, 1 cup ice cubes and 150ml gin or vodka. Secure the top. Shake well. Strain into two martini glasses. Repeat to make remaining two martini. Serve.
