Roasted Rhubarb

with Ginger Ricotta

  • 1 bunch rhubarb, trimmed
  • 3 tbs white sugar
  • 200g fresh ricotta
  • 5cm piece fresh ginger, peeled, finely grated
  • 2 tbs honey

1. Preheat oven 200°C. Line a small roasting pan with baking paper.

2. Wash the rhubarb. With a little water clinging, cut into 5cm lengths and put into the pan. Sprinkle over 2 tablespoons of the sugar and toss to coat. Roast 15 minutes until tender but still holding its shape.

3. Meanwhile, beat the ricotta, ginger and honey with hand mixer until smooth. Dollop the ricotta over the rhubarb. Sprinkle over remaining sugar. Serve.
