Sweet Potato Wedges

  • 1½ kg sweet potato, scrubbed, unpeeled
  • 1 bunch oregano
  • 3 tbs olive oil
  • 1 tbs maple syrup
  • limes wedges, to serve

1. Preheat oven 220°C fan forced. Cut the sweet potatoes in half crossway then into wedges lengthways. Put into a large saucepan, cover with cold water, add a good pinch salt. Bring to the boil over high heat. Drain well. Spread into large well-greased roasting pan.

2. Remove ½ cup leaves from oregano. Put into a bowl, add oil and honey and stir to combine. Spoon over sweet potato wedges, season and turn to coat.

3. Roast 20 minutes, turning once until golden and tender. Serve with lime wedges.
