  • 1kg seedless watermelon, peeled, cut into wedges
  • 125g soft marinated feta
  • ⅓ cup pistachio kernels, toasted, roughly chopped
  • 1 cup small mint leaves

VINAIGRETTE

  • 3 tbs extra virgin olive oil
  • 1 tbs lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp caster sugar

1. Cut watermelon into wedges. Arrange on plates or serving platter.  Crumble over the feta. Scatter over the pistachio and mint.

2. Whisk all the vinaigrette ingredients together, season and pour over the salad. Serve.
