  • 2 x 120g packets okra, trimmed, halved lengthways
  • 2 tbs extra-virgin olive oil
  • 1 tbs cajun seasoning
  • 1 tbs self raising flour
  • 3 tbs polenta
  • lime wedges, to serve

CHILLI LIME AIOLI

  • ¾ cup whole egg mayonnaise
  • 1 green chilli, finely chopped
  • 1 tbs lime juice

1. Place a roasting pan into the oven. Preheat the oven and roasting pan to 220°C.

2. Combine the okra and olive oil in a bowl, toss to coat. Combine the Cajun seasoning, flour and polenta in a snap lock bag. Add the okra, shake to coat.

3. Remove hot pan from the oven and quickly grease. Spread okra in a single layer over the base of the hot pan. Roast for 15 minutes, turning once or until golden.

4. Meanwhile, combine all the aioli ingredients together. Serve okra chips with aioli and lime wedges.
