Little Gem Lettuce
smoked salmon and horseradish crème lettuce cups
- 1 x 2 pack little gem lettuce
- 200ml crème fraiche or sour cream
- 1 tbs horseradish cream
- 1 medium Lebanese cucumber, finely diced
- 2 tbs drained capers, roughly chopped
- 2 tbs chopped chives
- 12 slices (250g) smoked salmon
- 1 lemon, cut into wedges to serve
1 Separate the leaves of the little gem lettuce, wipe clean. Arrange on serving platter.
2 Combine crème fraiche, horseradish cream, cucumber, capers and 1 tablespoon chives in a bowl. Season with pepper. Stir gently to combine. Top each lettuce cup with a spoonful of crème mixture.
3 Top with smoked salmon. Sprinkle with remaining chives and serve with lemon wedges.
