Little Gem Lettuce
Prawn & Avocado
- 1 twin pack little gem lettuce
- 16 cooked medium king prawns, peeled, deveined, chopped
- 1 large ripe avocado, halved, stone removed, chopped
- 1 lemon, cut into wedges
- 1 bunch chives, chopped
- ⅓ cup whole-egg mayonnaise
- ⅓ cup thickened cream
- 2 tbs tomato sauce
- 3 tsp Worcestershire sauce
- ¼ – ½ tsp red tabasco pepper sauce
1. Separate the leaves of the little gem lettuce, wipe clean. Arrange on serving platter.
2. Combine prawns, avocado, 1 tablespoon lemon juice and 1 tablespoon chives in a bowl. Stir gently to combine. Top each lettuce cup with a spoonful of prawn mixture.
3. Mix all the cocktail sauce ingredients together, season. Drizzle a little over each lettuce cup. Sprinkle with chives and serve with remaining cocktail sauce.
