  • 1 twin pack little gem lettuce
  • 16 cooked medium king prawns, peeled, deveined, chopped
  • 1 large ripe avocado, halved, stone removed, chopped
  • 1 lemon, cut into wedges
  • 1 bunch chives, chopped

COCKTAIL SAUCE

  • ⅓ cup whole-egg mayonnaise
  • ⅓ cup thickened cream
  • 2 tbs tomato sauce
  • 3 tsp Worcestershire sauce
  • ¼ – ½ tsp red tabasco pepper sauce

1. Separate the leaves of the  little gem lettuce, wipe clean. Arrange on serving platter.

2. Combine prawns, avocado, 1 tablespoon lemon juice and 1 tablespoon chives in a bowl. Stir gently to combine. Top each lettuce cup with a spoonful of prawn mixture.

3. Mix all the cocktail sauce ingredients together, season. Drizzle a little over each lettuce cup. Sprinkle with chives and serve with remaining cocktail sauce.
